Instructions

Step 1: Prepare the Roast

  1. Place the chicken or beef roast in a large roasting pan. Rub it with olive oil, rosemary, thyme, minced garlic, salt, and pepper.
  1. Roast in the oven for about 1.5 to 2 hours, or until the internal temperature reaches 75°C (165°F) for chicken or 63°C (145°F) for medium beef. Baste occasionally with its juices.

Step 2: Roast the Vegetables

  1. In a separate pan, toss the potatoes, carrots, parsnip, and onion with olive oil, salt, and pepper.
